Inasal comes from Bacolod, where grilled chicken is marinated in calamansi, lemongrass, garlic and vinegar, then basted as it cooks until the skin turns burnished and glossy. It is the most distinctive grilled chicken in Filipino cooking.
Ours is marinated ahead and grilled to order, served with java rice. The marinade keeps the meat moist under skin that has taken real colour from the grill — the whole point of a proper inasal.
